Welcome autumn!
Green miso soup of the 1st day of autumn.
Cook a shallot, chopped, in 1 tbs of extravirgin olive oil. Add some green peas, green beans and broat beans (and everything else green at your choice!). Add water or vegetable stock and simmer 15 min. Blend the soup and add 1 tsp of miso, if you like it and adjust with salt. Serve hot with some toasted pine-nuts and black pepper.
